Green Beans and Walnuts

One night I planned to make Green Beans Almondine (or however you spell that fancy side dish they serve in snooty restaurants) but 15 minutes before friends were going to show up for dinner I discovered I had no almonds and so I improvised. As you might imagine it's not terribly difficult.

Ingredient List

Nuke a package of frozen green beans until mostly done (if the package says microwave for 8 minutes do it for 7). While said beans are being nuked heat a splash or two of peanut oil in a frying pan. Add a handful or two of walnut pieces (don't bother chopping them, just snap them into bits with your hands - much more satisfying). Swish them through the oil and let them warm while the green beans finish heating.

Add the nuked grean beans to the pan. Listen to the satisfying sizzling sound they make. Answer questions from guests about what your making. Toss the oil, walnuts and beans about in the pan until it's all mixed together. Season with salt + pepper. Throw in a bowl. Serve.
